Ingredients
For the filling
- 1 lb ground pork
- 6 oz wood ear mushrooms, chopped
- 3 scallions, chopped
- 2½ Tbsp fish sauce
- 1 tsp black pepper
- 1 tsp chicken bouillon
- 2 tsp sugar
For the pastry
- Puff pastry sheets
- Eggs, whisked, for the egg wash
- Sesame seeds, for topping
Instructions
- Heat the oven to 375°F.
- Mix all the filling ingredients together in a bowl until evenly combined.
- Cut the puff pastry into 3-inch circles, two for each pastry.
- Place about 1½ Tbsp of filling in the center of half the circles, then lightly brush the pastry around the filling with egg wash.
- Lay a second circle on top of each and crimp the edges to seal.
- Cut a tiny hole in the top of each pastry so steam can escape and the pastries don’t burst.
- Brush the tops with more egg wash and sprinkle with sesame seeds.
- Bake for 22–26 minutes, until golden brown.
Notes & substitutions
Don’t skip the steam hole: without it, steam from the filling can split the pastry open in the oven.
