Stir-Fried Morning Glory · Rau Muống

Stir-fried morning glory in a grey bowl beside a cup of broth, with a plate of caramelized pork and a dish of quail eggs on the table

Morning glory blanched, then quickly sautéed with thinly sliced garlic and a spoonful of oyster sauce. A simple everyday side that we love next to thịt kho tàu.

Ingredients

  • Morning glory (rau muống)
  • 2 cloves garlic, thinly sliced
  • 1 Tbsp oyster sauce
  • A splash of neutral oil

Instructions

  1. Blanch the morning glory in a pot of boiling water for 2–3 minutes, then drain. Save the blanching water if you want to make the broth (see notes).
  2. Heat the oil in a skillet over medium heat and cook the garlic until fragrant.
  3. Add the morning glory and oyster sauce and sauté for 2–3 minutes.
  4. Serve warm.

Notes & substitutions

Don’t toss the blanching water: stir in some chicken bouillon and a squeeze of lime and serve it on the side as a hot broth.

We love to pair this with Thịt Kho Tàu.
