Scallion Oil Vinaigrette

A spoon in a glass bowl of dark scallion oil vinaigrette with bits of garlic, next to a clay pot of flaked salmon and rice

Scallions fried in oil until golden, then garlic, soy sauce and sugar simmered in the same oil and finished with black vinegar and honey. We spoon it over our Salmon Pot Rice and pile the fried scallions on top.

Ingredients

For the scallion oil

  • 6–8 scallions, cut into 2-inch julienned strips
  • ¼ cup neutral oil
  • 2 cloves garlic, coarsely chopped
  • 6 Tbsp soy sauce
  • 2 tsp sugar

For the vinaigrette

  • 2 Tbsp of the scallion oil sauce (above)
  • ½ Tbsp black vinegar
  • 1 tsp honey

Instructions

  1. Heat the oil in a frying pan over medium heat and fry the scallions, stirring constantly, until golden. Lift them out and save them for topping.
  2. Add the garlic to the oil and cook until lightly golden.
  3. Stir in the soy sauce and sugar, simmer for about 1 minute, then turn off the heat.
  4. Mix 2 Tbsp of this scallion oil sauce with the black vinegar and honey.

Notes & substitutions

The recipe makes more scallion oil sauce than the 2 Tbsp the vinaigrette needs.

We use it in: Salmon Pot Rice with Scallion Oil Vinaigrette.
