Ingredients

For the pork

  • 1 lb pork shoulder, thinly sliced
  • 1 stalk lemongrass, minced
  • ½ shallot, minced
  • 1 clove garlic, minced
  • 1 Tbsp oyster sauce
  • ½ Tbsp soy sauce
  • ½ Tbsp fish sauce
  • ½ Tbsp honey
  • 1 Tbsp oil
  • 1 tsp sesame seeds, plus more to finish
  • Salt and pepper

For grilling

  • Skewers

Instructions

  1. Mix the pork with the lemongrass, shallot, garlic, oyster sauce, soy sauce, fish sauce, honey, oil, sesame seeds, salt and pepper.
  2. Marinate for at least 1 hour, or overnight for the best flavor.
  3. Soak the skewers in water for 30 minutes.
  4. Thread the pork onto the skewers, tucking in any loose pieces.
  5. Grill over medium heat (about 350–375°F) for 7–8 minutes per side, until cooked through.
  6. Sprinkle with sesame seeds and serve.

Notes & substitutions

Soaking wooden skewers keeps them from burning on the grill. For rolls, wrap the pork in rice paper with lettuce, herbs, rice noodles, carrot and cucumber.
