Day-old rice fried in butter with kimchi, sausage and carrot, seasoned with chili paste and the kimchi’s own juice, then topped with a fried egg, sesame seeds and furikake.
Ingredients
For the fried rice
- Kimchi
- Neutral oil
- Sausage, diced
- Carrot, diced
- Green onion, whites chopped and greens thinly sliced lengthwise
- Garlic, minced
- Butter
- Day-old cooked rice
- Chili paste
- Salt
- Sesame oil
For serving
- Eggs
- Sesame seeds
- Furikake
Instructions
- Snip the kimchi into smaller pieces with kitchen scissors, then drain it in a fine-mesh strainer, saving the juice.
- Heat a little neutral oil in a skillet and cook the sausage, carrot and green onion whites.
- Add the garlic and cook until fragrant.
- Add the kimchi and sauté.
- Push everything to the side of the pan, add the butter, then the rice.
- Stir to combine, then add the chili paste, kimchi juice, salt and sesame oil.
- Fry the eggs in a separate pan.
- Plate the rice and top with a fried egg, the green onion greens, sesame seeds and furikake.
Notes & substitutions
Don’t toss the kimchi juice: it goes back in with the chili paste and gives the rice its color and tang.
