Morning glory stir-fried in a hot wok with lots of garlic, oyster sauce and fish sauce, then tossed with a splash of sesame oil. A simple everyday side that we love next to thịt kho tàu.

Ingredients
- 1 bunch rau muống (water spinach or morning glory)
- 8 cloves garlic, smashed and roughly chopped
- 1 Tbsp oyster sauce
- 1 Tbsp fish sauce
- 1 tsp sugar
- 1 tsp chicken bouillon
- 1 Thai chili, minced (optional, for a spicy version)
- Black pepper, to taste
- A splash of neutral oil
- A splash of sesame oil
Instructions
- Heat a wok over medium heat, add a splash of neutral oil and cook the garlic until fragrant.
- Add the morning glory and stir-fry until tender-crisp, 2–4 minutes.
- Add the oyster sauce, fish sauce, sugar, chicken bouillon, Thai chili (if using) and black pepper. Toss to combine and cook for another 2 minutes.
- Remove from the heat, toss with a splash of sesame oil and serve.
Notes & substitutions
This stir-fry is better without blanching, so for the hot broth on the side we blanch a separate batch of morning glory, then stir chicken bouillon and a squeeze of lime into the blanching water.
We love to pair this with Thịt Kho Tàu.
