A hand-whisked aioli with sweet, mellow black garlic and a roasted habanero for heat. We made it to go with our carne asada.

Ingredients
- 3 cloves black garlic
- 1 habanero, seeded
- 1 egg yolk, at room temperature
- 1 tsp Dijon mustard
- 1 tsp lemon juice
- ¼ tsp kosher salt
- ¾ cup neutral oil, such as avocado oil
Instructions
- Roast the habanero, let it cool, then mince it.
- Mash the black garlic into a paste with a fork. You should have about 1 Tbsp.
- In a small bowl, whisk together the egg yolk, Dijon, lemon juice and salt.
- Whisking constantly, add the oil drop by drop until the mixture starts to thicken. After about ¼ cup, add it in a thin stream, and a little faster again after ½ cup.
- If it’s too thick once all the oil is in, whisk in water a teaspoon at a time.
- Whisk in the black garlic paste and habanero and let it sit for at least 10 minutes so the flavors meld.
Notes & substitutions
Go slowly with the oil at the start; adding it too fast is what breaks an aioli. If your arm tires, take a break.
We served it with Carne Asada.
