Ingredients

For the salad

  • 2–3 small cucumbers, sliced
  • Salt
  • 1 tsp soy sauce
  • 2–3 Tbsp rice vinegar
  • 2 Tbsp mirin
  • 1 tsp sugar
  • 1 tsp sesame seeds

Instructions

  1. Toss the cucumbers with salt and let them sit for 10 minutes to draw out the water.
  2. Rinse with cold water and squeeze out the excess liquid.
  3. Mix the cucumbers with the soy sauce, rice vinegar, mirin, sugar and sesame seeds.
  4. Let sit for at least 30 minutes before serving.

Notes & substitutions

Salting and squeezing the cucumbers first keeps them crunchy and stops the dressing from getting watered down.
